Muskox burger paddies

Cut the meat and the fat into pieces, mix with the salt. Let partially freeze and then grind everything. Gently lift the meat when it comes our of the grinder onto cling film or foil. Shape into a tight log and let set in the fridge over night. Cut into paddies and fry or grill.

1 kg muskox meat

100 g porkfat or muskox fat

11 grams of salt
